A Completely Sustainable Food System

A restaurant concept designed to address the growing dilemma of the topic of food waste and ignorance regarding produce origin and supply amongst consumers.

 

Tierra takes the concept of "farm to table" to new lengths, directly connecting the eater to the food and it's source.

The Challenge

How can we connect people to the food systems that sustain them?

The Process

To answer this question, I wanted to use the concept of "farm to table" dining, and exaggerate it. To do so I wanted to create an experience and physical space which would enable the user to not only understand the origins of the food that they ate, but also see the entire process from that point onward to get each item to the consumer's plate.

The Result

Tierra -- a restaurant and property which is entirely self-sustaining. Every component of a meal is sourced, grown, and disposed of within the grounds, allowing customers to see the complete life cycle of the food which they consume.

The System

After outlining the general concept, I then created a logistical outline, which worked out how each portion of the business would contribute to the overarching mission, and function as a system

To further this, I also designed a mock outline of a seasonal menu, complete with a range of meals that such a restaurant would be able to serve based on the system outline.

The Outcomes

Creating this business concept gave me the opportunity to make a design which could be implemented in reality as soon as tomorrow, should the opportunity be provided. Additionally, I was able to explore a potential alternative solution in answer to the growing disconnect between consumers and food. Tierra then becomes a way to bridge the Urban/Rural Divide supporting local agriculture, while simultaneously educating customers.
